Moving is so horrible. It’s not just the expense, organizing, packing, logistics, and manual labor in 100 + degree weather that I am talking about. It’s the disruption of everyday life. Where is my hairbrush? Have you seen my keys? What box are the lunch bowls packed in? Did we pay that last electric bill? Shouldn’t I be turning left here?
The really frustrating part for me is that I am too tired to cook anything. We love to eat and we usually want to eat our own food so I tried to think of something quick and easy to cook this past weekend. I cooked a pork roast in the crockpot with lots of onions. That was a nice meal.
I used some of the leftovers to make tostados and they were delicious. What’s not to love about tostados? They are cheap, you can load them up with just about anything, and they are fun to eat. They crunch and they are messy and you can’t be in a bad mood with a tostado in your hand. My tostado had refried beans, the onions and pork roast, mozzarella cheese (because that is what we have) avocado, and pickled jalapenos. I made it in about seven minutes.
Tostados are a happy, noisy food and it is just a fun word to say……….TOSTADO.
