Summer is almost here and the tomatoes in the grocery store are gorgeous at this time of year. There are so many things to cook with good tomatoes. I like to put whole grape tomatoes in a quiche or savory bread pudding. I love that pop when you bite into the whole tomato. I like to roast tomatoes and put them on pasta or a sandwich. But I think my favorite way to cook tomatoes is on a plain cheese pizza.
I cooked this pizza on an iron griddle. I made the pizza dough and let it rise for an hour. I punched it down and preheated the oven. I put the iron griddle in the oven to let it preheat so it would be nice and hot when I put the pizza dough on it. You have to be careful here and get the pizza dough just the size you want it because after you drop it down on that hot griddle, you will not be picking it up again! I spread some garlic infused olive oil on it and then sprinkled shredded mozzarella cheese all over it. Then I carefully placed the tomatoes on it to make it look beautiful. I like to brush the edges of the crust with olive oil infused with garlic and salt. Bake the pizza and take it out and throw it on a rack to cool. Mmmm, enjoy.
Pizza Dough Recipe
In a bowl: 1 cup all purpose flour 1 package yeast 1 tbsp sugar 1 tbsp garlic powder 1 tsp salt 1 cup warm water (I warm it in the microwave for about 25 seconds – you just want it to be lukewarm never hot).
Mix it all together and then put the dough on a floured counter. Add a little flour at a time while kneading the pizza until it is no longer sticky. I usually end up adding about another cup of flour but you may not need that much or may need a little more.
Place the ball of dough into a mixing bowl that has been sprayed with oil spray or you can just use olive oil to oil the bowl. Cover with plastic wrap and let the dough rise for an hour. After an hour, punch the dough down and cover it while you get everything else ready. Preheat the oven to 450 degrees.
When the oven is ready, shape the dough and put it into your pan. Add your sauce or olive oil, next add the cheese, and then add your toppings. In a small bowl mix together 2 tbsp olive oil, ¼ tsp salt, ½ tsp garlic powder and brush it on the edges. Bake until the crust is starting to brown and the cheese has melted.
