Gazpacho Panzanella

 

H bought a membership to a local spice club for my birthday last year. I enjoyed it so much that I requested it for my birthday again this year. Each month I receive, in the mail, a recipe card with small packets of spices. Gazpacho Panzanella (Tomato and Bread Salad) has been one of my favorites so far. It came with the spices of achiote rub and cumin (which is one of our favorite spices). Basically I made croutons by cutting the bread into cubes and tossing it with olive oil and the achiote rub. I baked them in the oven until they started to get crisp. I then tossed them into a salad made up of shrimp, tomatoes, bell pepper, cucumbers, avocado, and scallions. I tossed it with a simple red wine vinegar dressing.

 

It’s really fun to try a new recipe each month and though I don’t always like this or that spice, it’s good to know either way. Some of these recipes I probably won’t make again but most of them are really good. Check to see if you have a local spice shop in your area. They may have something similar available. If you don’t like to cook, it’s a great gift for those who do (like me). Thanks again H, I love it!
